Ćevapi the best Balkan food

Cavapcici , the dish of minced meat, popular in Bosnia and Herzegovina and other Balkan countries since the days of the Ottoman Empire.
They are prepared with a mixture of three meats: lamb, veal and pork and, they are different from burgers, because they have cylindrical shape.
Usually with cevapcici you can eat ajvar sauce or onion or kajmak sauce inside special bread called lepinja or pita bread, or can be served with fried potatoes.

Ajvar-Raw red pepperoni, mixed with minced garlic, olive oil, and a little bit of vinegar.

Kajmak-like a grainy cheese, prepared in Bosnia and Herzegovina, Serbia, Turkey, the Middle East, Central Asia, Iran, Afghanistan and India. It can be prepared from buffalo milk or cow milk.
This cream has a large amount of fat, about 60%.It has slightly sour taste.

500g minced beef
1 onion
50-100 ml of water
30 g bread crumbs
1 clove of garlic
5 gr baking soda

Preparation and cook time
Prep time: 1 hour 30 min
Cook time: 20 min
Ready in: 1 hour 50 min
Yields: Recipe for two persons


Mix well all the ingredients. If you do not like too much the flavor of onion you can add just a little bit. But you have to add some onion angel garlic as well.
Leave the meat at least an hour in the fridge.
When the meat is ready form a ball, and after create "sticks " typical of cevapi form You can make thinner or thicker meat sticks depending on what you want.
Put some oil on medium heat and slowly fry the cevapcici. The oil should not be to hot if not the meat will burn. You need to turn constantly the meat. Fry only a few minutes and add about 50 ml of water. This should help the meat to remain raw in the middle and that is also not overcooked on the edges. Cover cevapi and leave like that about 3 minutes. Lift the lid and allow the water to evaporate.
